We have introduced new technologies into the production, freezing and packaging systems. These innovations have been combined with tradition and trueness, in order to create a high quality product which is always in line with market requirements.

The production of round or square pizzas, focaccia bread from Genoa and all of the other products start with the selection of raw materials that are carefully controlled in compliance with our HACCP system. Products containing MO (genetically modified organisms) or by-products of GMO are not used and the dough is prepared using selected raw materials of a controlled origin.

While production and cooking is carried out very quickly, leavening requires many hours. Only fresh and natural yeast is used and for this reason our products turn out to be so light and crumbly. For this reason the pizza becomes even better each time that it is warmed up rather than turning chewy and this is the characteristic that distinguishes our product.

Then pizzas, small pizzas and focaccia bread are taken to the packaging area where they are frozen using nitrogen for food use, the only one that does not give that famous "pinch" to products with a high content of water such as tomatoes, packed at a controlled temperature and sent to the storage cells which are kept under constant control in order to guarantee a regular flow to the cold chain.

All of this is carried out in compliance with the Legislative Decree n. 155 through the control of production and storage systems, tracing and analysis systems of products at random.
